My best friend likes to live on the edge. I don’t mean to say that she’s irresponsible; in fact, she’s just the opposite. But if there is any kind of high-adventure activity, she’s game: surfing, zip-lining, paint-balling, climbing an Alaskan glacier with ice picks, running with the bulls in Spain, etc. etc.
Okay, I was kidding about the bulls, but she’s done all the others, and here is a picture of her in action.
You’re probably wondering what on earth she’s doing. She’s flying in a wind tunnel. She loves this kind of stuff. If I ever did that, I’d have to take up residency at my chiropractor’s office. If you think it looks like fun, check it out here. On the other hand, if you’d rather make some delicious chocolate mint cookies, you’re in the right place. The ingredients you’ll need are butter, brown sugar, water, chocolate chips, vanilla, eggs, flour, baking soda, salt, and some delicious Andes mints. Boy, do I LOVE those Andes mints!
Place the butter, brown sugar, water, and chocolate chips into a large pot and heat until they are melted together. Add vanilla and set aside to cool for a few minutes.
Meanwhile, in a large bowl, mix the flour, baking soda, and salt. Whisk the eggs into the chocolate mixture.
Fold the chocolate mixture into the dry ingredients and mix well. Cover and chill for about 1 hour. Then roll into balls about the size of a ping pong ball. Place on cookie sheets sprayed with cooking spray and bake at 350 for 9 minutes.
Meanwhile, unwrap the mints.
As soon as the cookies are removed from the oven, set one mint on top of each cookie. When the mint looks glossy, swirl it with the back of a spoon.
Oh yum!
Chocolate Mint Cookies

Makes about 75 cookies

Dear Winner Dinners, These cookies look and sound so good. However, due to my current status as a weight-loss devotee, for the time being I shall have to delay making them!
