Baked Potato Soup




You’re probably wondering what that is and why it’s sitting there below the recipe photo. It’s the for sale sign in front of my house. Our house has been for sale now for almost four years! I’m not kidding. We first listed it in May of 2008. So now you’re probably thinking we need to lower the price. We have. Again. And again. And again. One guy even called our agent after noticing that our price was lower than some of the other houses in the neighborhood and wanted to know if there is something wrong with it. Wrong with it? Well, there’s just One. Tiny. Little. Thing. It’s haunted!


Not really, but if we haven’t sold it by Halloween, maybe you can help me spread that rumor. The publicity would be great, and I could sell tickets instead of having people look at it for free. But seriously, if you’re looking for a great house in the Provo area, give our agent a call. His number’s on the sign. And what’s wrong with trying to sell my house on my cooking blog? Doesn’t everybody do that?


Baked Potato Soup!  This is my youngest daughter’s favorite soup, and it really is good — a perfect dinner for cold winter nights.  The ingredients you’ll need are potatoes, butter, flour, milk, green onions, bacon, cheese, sour cream, and some salt and pepper. The first thing you’ll need to do is to get your potatoes in the oven so they can start baking. I bake mine at 400 for about an hour and 10 minutes, and I use potato nails so that the centers get cooked well.
Then you can start cooking the bacon and chopping the green onions.
Once the potatoes are out of the oven, cut them in half lengthwise. Scoop out the pulp and put in a small bowl. Use a potato masher or a fork to break up any large pieces of potato.
Melt the butter in a large pot. Add the flour and stir.  Gradually stir in the milk, and continue stirring until smooth, thickened, and bubbly.
Stir in the potato pulp, salt, pepper, onions, bacon, and cheese. Cook until heated. Stir in the sour cream.
If desired, add toppings to individual servings. Doesn’t it look yummy!

  10. Dee, thank you for the nice compliments about my blog! The potato nails are made specifically for food and are lighter than normal nails. I think they are made of aluminum, but I’m not positive. I’ve had some trouble finding them in the stores lately, but here is a link to them on Amazon.com: Potato Nails
