Stuffed Pasta Shells with Italian Sausage

A few years ago, my youngest daughter had dinner at a friend’s house, and then she told me how much she loved what was served.  She described it as pasta shells that looked like seashells, stuffed with a cheese mixture, and then topped with a tomato sauce.    I decided to create my own recipe for what she was describing.  I had to make it three or four times before I felt like I had the cheese mixture just right, and now this is one of my favorite dinners.

I wanted to include Italian sausage in the sauce just because I LOVE it.  My favorite brand happens to be Johnsonville.  They aren’t paying me to say this, but I really do like their sausage.  The butcher section of my grocery store makes their own Italian sausage, but it doesn’t come close to being as good as this brand.  I personally like the Johnsonville HOT sausage, but it definitely adds a kick to the sauce, so when we are having company, I sometimes use a mixture of the HOT and the MILD just to tone it down a bit.  They also have SWEET Italian sausages, so just pick the one that you prefer.
