Simple Cheesecake Pie with Fruit Topping



I have been making this Cheesecake Pie since I was in high school.  It’s such a simple recipe that I wondered if I should even include it on my blog.  But then I decided that there’s nothing wrong with a simple recipe as long as it’s also delicious, and this definitely is.  The original recipe didn’t have a fruit topping, but it’s so easy to add it just before serving, and it just makes the cheesecake even more tasty, and prettier too!

Simple Cheesecake Pie with Fruit ToppingI always use a pre-made graham cracker crust when I make this.  Of course you can make your own graham cracker crust, but remember, the beauty of this recipe is that it’s simple and FAST.

This cheesecake has two layers.  The bottom layer is made with cream cheese, sugar, lemon juice, vanilla, eggs, and salt.  After you bake that layer, you add a top layer made with sour cream, sugar, and vanilla, and you bake it for another 10 minutes.

I usually only buy one can of fruit topping, but I took advantage of the fact that I was photographing it this time, and I bought three different kinds.

They were all delicious!
