So now let’s get to cooking.  My whole family LOVES these lemon cookies!  When I first came across this recipe, there was no icing.  I thought the cookies were really good, but I could tell that they would be even better if I added a lemon icing.  All I did is mix up some powdered sugar with some fresh lemon juice, and it was perfect.  If you are a lemon lover, you’ll definitely want to try these.  You’ll need 2 lemons, butter, sugar, powdered sugar, an egg, oil, flour, baking soda, cream of tartar, and salt.  In a large bowl, combine the butter, 1/2 cup sugar and 1/2 cup powdered sugar; beat well.  Add the egg, oil, and lemon peel; mix well.

Add the flour, baking soda, cream of tartar and salt to the sugar mixture; beat until well blended.

Cover the dough with plastic wrap; refrigerate for 2 hours for easier handling.

Heat oven to 325.  Shape dough into 1-inch balls.  Roll the balls in granulated sugar.

Place 2 inches apart on ungreased cookie sheets.

Flatten cookies into 2-inch rounds with the bottom of a glass.  Bake at 325 for 9 minutes or until edges begin to set.  Cool 2 minutes.  Remove from cookie sheets; place on paper towels.

Juice the two lemons.

In a small bowl, blend the 3-1/2 cups powdered sugar with enough lemon juice for desired spreading consistency.  Depending on the size of your lemons, you may not need to use all of the lemon juice.

Spread the frosting on the cooled cookies.  I think you’ll agree that they are fantastic!
