These Banana Pillows are a super easy dessert that my youngest daughter taught me how to make after she made them in her catering class at school. They are so easy that even kids would enjoy making them. The pillow is made out of Puff Pastry which can be found in the frozen food section of your grocery store.
The pillow is then stuffed with bananas in a delicious brown sugar sauce.
Dust with powdered sugar, and you have a fantastic-looking dessert that’s also really yummy!

1 sheet of frozen puff pastry
1/2 cup butter
1/3 cup brown sugar, firmly packed
1/4 teaspoon vanilla
3 tablespoons heavy cream
Preheat the oven to 400. Open the sheet of puff pastry and allow it to thaw for about 15 minutes. Unroll it and gently smooth out the creases. Cut it into four 5-inch squares. Place them on a parchment-lined baking pan. Bake for about 15 minutes or until golden. Remove from the oven; set aside to cool.
While the pastry is cooling, peel and slice the bananas 1/4-inch thick on the diagonal. Place the butter, brown sugar, and vanilla in a saute pan over medium heat. Cook, stirring constantly, until the butter and sugar are melted and combined. Continue to stir and cook until the mixture begins to boil. Stir in the cream until mixture is smooth. Remove from heat. Add the bananas; gently stir until coated.
Using a paring knife, remove a 2-inch square from the top center of the pillow, keeping the bottom intact. Fill the pillows with the banana mixture and then place the cutouts on top of the banana mixture. Dust the pillows with powdered sugar.
