If you happen to be looking for a chicken recipe that’s both easy and delicious, you’re in the right place. This Apricot Glazed Chicken couldn’t be easier, and it tastes great, too. The sauce is made from apricot jam, Russian salad dressing, and dry onion soup mix. It’s just a matter of mixing those three ingredients together with some salt and pepper and pouring it over the chicken. Then it bakes in the oven for an hour.
I photographed this recipe over rice, but I actually think that my Garlic Buttermilk Smashed Potatoes make for an even better side dish. There is plenty of the apricot glaze to top the chicken, as well as the potatoes, and it all tastes really good together. Go ahead, give it a try!

16 chicken tenders
1 cup apricot jam
1 cup Russian salad dressing
1 envelope dry onion soup mix
1/2 teaspoon salt
1/4 teaspoon pepper
Preheat the oven to 350. Place the chicken in a buttered 9×13-inch baking dish. Combine the remaining ingredients and pour over the chicken, lifting the chicken pieces as needed to ensure that some of the sauce is below them. Bake uncovered for 1 hour.
